Too Late?

Post by brad mercer »

I am currently drinking a very young Canadian Blond with 300ml honey which is the ducks nuts. I have just put down a Coopers Pail Ale ( Brew booster#2 SAFALE yeast) two days ago, starting SG of 1040 Currently 1020 what would be the effect of adding honey now to this brew or is it a no no.... Due to space limitations I am unable to rack :(
Cheers,
Brad.

The flavour and aroma of the honey will be large. You can do it, rememnber to let ferment out though. Just make sure it is pasturized

I have added honey to Coopers Pale Ale and was not impressed. The honey was overpowering. I added 300g and only now at 12 weeks has it achieved some sort of balance where the honey is not so pronounced.

I've added honey (and golden syrup) to many beers before and this is the first time I've been disappointed. I suggest in this mix you keep it down to about 100-150g to begin with and maybe try with a bit more once you see how it works out
