late hopping
hey all,
i'd like to add a late hop addition to a lager that's still in the brewbox @ 13deg C.
trouble is the Pellet Bag has been in the fridge , opened for quite awhile and i'm a bit concerned about infection.
my thoughts are to boil the hops in a tbsp of DME and 250ml of water for 10min. cool and add to brew.
see any probs ?

Actually the higher the SG the less hop effect you get. Thats why you need more hops if doing a partial mash or boil
I have never heard that a little is needed though but that doesn't mean anything. If it works for you do it.

I've certainly heard that malt assists in the extraction of hop oils.
I think I have observed before that if this is the case then there must be a "sweet spot" before which more malt will assist with the extraction of oils, and after which it will inhibit the extraction of oils.

Hops are chockers full of acids. oils and such.
If you are looking to bitter your beer, the primary purpose of hops then you have the normally badly soluble in water alpha acids into more soluble in water and you do this by isomerisation which can be achieved by boiling the crap out of the wort with the hops added.
Oliver and Dan are the right track though.
When you buy hops they have an AAU rating, this is the percent of Alpha Acids in the pellets/flowers, if you were to steep them in lighter fluid you might get some pretty good extraction but we normally boli them in wort so the "utilisation" is about max 25%.
The major factor in utilisation is the amount of time in the boil, though after 60 minutes the utilisation falls very rapidly..it is very complex and we actually have three models, Raeger, Tinseth and some else. I personally prefer Tinseth as he incorporates the gravity of the wort, that is that hiher gravity = less utilisation.
Oh as to the oils in hops..these are highly volatile and will be driven off very quickly, thus the concept of aroma hopping at flame out ..

In order to extract the alpha acid, which gives you the bitterness you need to boil the wort, rolling boil that is. Additionally, the higher the SG of the wort the less efficient the acid extraction which means you need more hop. After 60 min, there is nothing left to give and it is my understanding that you start to get some bad flavours from the beta acids to.
The aromatics, which is what you smell, are volatile and will come off very quickly in the boil (thats why they smell so good). This why we talk about dry hopping etc, to contain that aroma.
