now i have to work out how to target a certain Alc %, and achieve it.
7.5% is a bit bigger than my std brews of 5%.
this step up to Partials is a bit of a learning curve, but made a lot easier by this forum and it's members.

I generally mash 2-2.5kg & add a 1.7kg tin of LME after the boil.. usually gives me an OG around 1.040-8. if you dont already have it check out beersmith - http://www.beersmith.com - i find it a pretty handy tool

a couple of things got a bit hairy there for a while but it all turned out ok.
i left it to get a decent start last night and put it in the brewbox this morning, at 11*C.
It's got a Hell Krausen and smells like Heaven !
