Will be putting down a Morgans canadian light later in the year for the wife just wondering the what would be the minimum amount of dextrose? the coopers book recommends 250g = 3.2-3.5% alc as an absolute minimum - would 100g be all right?

I'm only guessing, but I reckon you'd be fine. Although, expect fermentation to be finished in a day.
With the Coopers ginger beer for example, there are 2 options when making it; alcoholic and non-alcoholic. The later is made with no fermentables added and the yeast is given only a couple of hours to tidy things up before bottling.
My guess would be the same for beer, but I'm happy to let you try it first Polar

Yep, a 1.7KG can and 10 liters of water gave me about 4.5% alcohol and 19 stubbies. Not too bad taste, Drinkable. A bit over hoppped but live and learn...
