I scored one of these for Xmas and want to get it on the go soon. Does anyone know a good recipe to make it?

Hops, extracts, honey.. etc?

All ideas much appreciated.

My favourite recipe for this brew is,
Coopers bitter 1.7 kg
1.5 kg liquid malt extract
200 gms wheat malt- for improved head
200 gms dextrose
safale so4 ale yeast
22 litres volume
7 gms cascade hops-boiled for 5 minutes with wort.

Can of concentrate
1kg DME
250g citrus honey
200g dextrose
Safale S04
150g steeped chocolate grain
7g cascade for aroma

This is not strongly honey flavoured. The honey just brings out a richness in the overall flavour.

cooper's bitter can
500g light dry malt extract
500g cracked medium crystal steeped at 70*C for 30 mins
25g fuggles (10g @ 10 min, 15g @ flame out)
20 litre volume
WLP051 yeast


not heavy on the alcohol but tastes good, great head due to the crystal

Finally, I've got off my arse... well, time has presented itself to allow me to rip into this number.

I've got Fuggles and Cascade and some Safale S04 in the freezer, my Coopers Bitter is sittng by and I'm ready to just brew this bugger.

Which hops should I run with and has anyone got some adjuncts that will improve, ie, jam, syrup, malt, honey, etc....?

I'm always keen to expirement, but generally, I'm looking for a full-bodied malty beer with head.

Anyone got a great idea?

Thanks to all who've added ideas. I'm sure to use them. but I'm still keen to hear of more recipes before I put this baby to bed.

I wouldnt think youd have to add too much Daron, off the cuff the bitter is a lovely malty beer, with some great bitterness....and a creamy head. Too much may be a negative effect.

Maybe just some finishing hops to add some aroma, along with your malt booster. Id go with the fuggles in the last 5 mins of a boil.

By the way, you shouldnt have frozen your safale. Not a good move. I learnt that way back, used a frozen yeast in a brew after rehydrating it. Didnt kick off my brew. I suspected it while rehydrating. Keep your yeasts in the fridge. Then before rehydrating, put the packet in your pocket to warm it up.

Thanks paleman.

I was wondering if freezing the yeast would disrupt it. If it take it out and let it thaw will it improve?

Anyway I'll get on onto this brew this week.

PS, i just washed down a few too many pale ales and a long neck of a red ale i made about 8 months ago (mmmmmmm!) .... faaaark it's hard to type after them!!! giddy up.....

Your right Ash, freezing a yeast can kill it outright.

Daron you may be lucky. It may have survived. Yeasts are more tolerant of cold than hot.

Try a yeast starter ( rehydration ), to see if its ok. Put it in a glass of luke warm water, has to be sanitary. Up to 30 degrees cels. Cover it with gladwrap. In around 20 minutes it should be frothing. Then add some of your wort to the glass....starter, before pitching. This lessens the shock. Yeasts are prone to shock.

If it all looks fluffy and good, and smells like magnificent bread, add it to your fermenter. Dont stir, just drop it in.

Great beer guaranteed, as Grumpys say.......and it works for me. :P

I just started a batch of this on Saturday evening:

1.7KG Coopers Bitter
1.5 KG John Bull Diastatic LME
300g Crystal Malt
15g East Kent Goldings (flavour)
10g East Kent Goldings (aroma)
Safale S04 yeast

I steeped the crystal in 4 litres of water at around 65 C for half an hour and then brought to the boil. I added the flavour hops and continued the boil for 15 minutes, then added the aroma hops, turned the heat off and let it sit for another 5-10 minutes. Poured the wort into the fermenter and added the kit, malt, water and yeast to make up just under 21 litres. OG was 1.046 before pitching the yeast.

The Safale gave a pretty active fermentation (to put it mildly). Yesterday morning the beer was edging out the top of the airlock and I had to replace it a few times. The temperature had also climbed to 26 - 28. I normally have to keep a towel on my brews to keep them warm but this time I had to take it off to cool it down. The temp dropped slowly to 20 - 22 yesterday. Hopefully the initial high temp won't make too much difference.

Haven't tried this kit before so it will be interesting to see how it turns out.

I tried this for an experiment.

Can of Coopers bitter
1kg morgans master blend chocolate
1kg ultra brew (250g corn/250g dex/500g LDME)
safale yeast
22L

Bottled tonight and seems like it will be a good winter ale.

Will post tasting in 3 weeks or sooner.
Never tasted FREE beer I couldn't learn to like!
