Recipe feedback

Post by SomeJerk »

Hi all,

New brewer here :D

I've brewed only a couple of batches so far, so I'm not that experienced. Anyway I have tried formulating a recipe. It's supposed to be a refreshing summer beer, Belgian witbier style, but with less alcohol - so I can drink a lot without getting hammered.

Can someone please take a look at the recipe and tell me if I'm all wrong, or if it looks ok?

Ingrediens for 24 liters:

Dry wheat extract 2.5 kg
Saaz hops 3.8% 40 grams (boiling time 60 minutes)

35 grams of coriander, zest of 1 lemon and 1 lime to be boiled with the wort for the last 10 minutes.

Yeast: WLP400 Belgian Wit Ale

The alcohol content should be 3.8% and bitterness 16 IBU

I have some doubts about the low alcohol content. Will it result in a water-thin beer or it is feasible to brew a well-tasting beer with low alcohol content?

Martin,
If you are trying to make a wit then you need to use some torrified wheat. there has been a recent topic regarding wheat, weizen, wit on the forum over the past few days, have a read.
the bitterness is about right but i would cut back on the amount of lemon/lime rind you are going to add. Just add half the amount and boil for last few minutes only, otherwise you might end up with lemon/lime overdose.
If you are worried about the body perhaps add some LDME.

Cheers
