Just use any kit, add 1kg dextrose, and then wonder why it tastes foul. You could also add some dry beer enzyme.
Either that, or make a beer, and then water it down prior to bottling.

If you want to limit carbs in your diet you have a choice.
Drink a, maybe watery, lo-carb beer. Make one if you need to.
or
Find the beer you *really* like and drink less of it or less often and really enjoy it when you do.
Ride, Drink, Repeat.

I've done a ESB lager with 500 grams of corn syrup and some Hallertau hops, leave it in the bottle for a few months. Only low carb/alcohol beer I've ever made but was suprised with the taste.

Doesn't corn syrup not totally ferment out though? ie. it leaves carbs in on top of those in the kit?
Low carb would be a kit alone plus dry enzyme plus however much dextrose (fully ferments to alc) you want just like Chris said, wouldn't it?
How much dry enzyme can you add & what else could you do to lower the carb content?

If you want to limit carbs in your died, u should cut back on the less necessasary carb intakes, like food, not beer.

I agree with velophile.
As I said before, just make your beer using only glucose. Either that, or don't add any sugars at all.

i'm not sure but maltodextrin is only about 65 -75% fermentable, thats why they use it to increase the "body" in a brew. The higher the non fermentable sugars the lower the alcohol. the higher the body and the higher the body weight....as in the fatter you get.

Malto Dextrin is unfermentable fo all intents and purposes.
If it is 5 percent I'd fall over but it does add carbs.
The best way to make a lo carb beer is to do just a can, leave the other adjuncts out
