You should be able to find vanilla pods in the dried herb section of Coles or Safeway.

Thanks Oliver, I ended up getting 1 from from the Health Food shop.
Any one have any experience or suggestions about how much to add and how long to boil for? Will probably use half a pod and boil for the hour with cinnamon and the cloves unless I come across better advice.

I know u think u understand what u thought I said, but I don't think u realise that what u heard is not what I meant.........
the best way to get the vanilla flavour to release is to split the pod lengthwise. this opens the inside, but will also release the seeeds, tiny little dots, but should settle out.
Ground Coriander is ground coriander seeds. best to use whole seeds and crush before use in a mortar and pestle if you have one to get the best flavour. or try a peppergrinder.
Have tried Hoegarden, but not a big fan of Belgian beers/lagers at the best of times. the hint of coriander and orange was differnet. had even thought of making a curry beer, using fresh ground dry herbs.

What was the verdict on this one? Geoff seemed to think fresh was not as good as dried.

Actually, I don't think I tried it. We haven't drunk beer together in ages, although we're seeing each other today. Among other things, we'll be tasting the third bottle of the Millennium Ale.
