Hi MM

My fave Ginger Beer is the Coopers kit plus ~150g fresh ginger sliced fine & simmered for a few mins in ~1 litre water with a bit of raw sugar.
Add at least 2 - 3 kg of raw sugar & you get about 6 - 7% ABV in 23 litres.
I have found that the kit yeast struggles a bit with this hefty mix & will be adding some yeast nutrient in my next batch.
Ride, Drink, Repeat.

OG 1039 prob about 5% alcohol when finished.

will this be very gingery and should i brew it at 25 degrees like the can says to or should i reduce that?

Hello world. How convenient. I sign up and your talking about exactly what I made yesterday.
All the one batch of Coopers Ginger Beer I've made so far has gone down a treat, expecially with people a bit wary of homebrew. But if you make if by the on packet instructions you only get 3.5%. :(

So yesterday twas:
Coopers Ginger Beer kit
1kg body brew ( or ultra brew cant remember)
1kg Coopers Light Dry Malt
250gm of dextrose for good luck
and the included yeast

This should produce around 6.2ish%. Normally I'd be more accurate but I was putting in everything I could find really. My only advice for sure is to leave it for a bit longer, as i made a 6.5% a while ago leaving it for only a week in primary then straight into bottles and it wasn't so great.

Brew on!

I'm in the process of preparing my second ginger beer so a few questions...
How did that end up?
Did you make it to 23L or 20 as stated on the packet?
Was it very gingery?
Got Malt?

Melbourne Man - you probably should have peeled the ginger first, as if you smell it when unpeeled as opposed to peeled, it releases a lot more flavour. If you are boiling it for any length of time, I don't think it would make that much of a diff, just a bit less gingery aroma.
