I did it with 1kg of LDME. Came out nothing like a corona, but very tasty. Good reviews from all comers. Even my wife and sister had pleasantly surprised expressions when they tried it.

I'm doing one soon, the Coopers Mexican is one of my favourites. The only thing I would suggest, and I already have sitting around for the brew, is to add Cascade hops, looking to add a little extra fruity flavour/aroma with those hops, dry hopped (chucked in dry with the yeast).

This might sound a bit out there, but when I was researching about gruit, I found that rose petals and rosehips came up as ingredients sometimes used. So when I was in the asian grocer and noticed a packet of rose buds "for tea", I bought a packet thinking that a really pale beer infused with some rosebuds might be interesting. Afterall, rosewater is used in a lot of Persian (and derivative middle eastern) food.

Quite a number of mead recipes that I've seen include tea ("normal" kinds and herbal kinds), so I don't see why a colourful/flavourful tea might not be good in beer. Or it might be awful.

i'm partial to the occasional rose hip tea

This seems to be a popular brew atm. I have got a Mex Cerveza in the fermenter atm and it is going nicely. Tasted bloody awful on the first day (I taste...want to gauge improvement over time) and on day 8, it was MUCH better. I used saflager yeast dry enzyme and brewcraft brew enhancer #10 in addition to the kit (it was a brewcraft one). I'll be bottling in maybe another week or so.

Looking forward to it in about 1 months - 6 weeks time.

How did your's go Melb Man?

sorry guys for the delayed response
my recipe was:

1.7kg can Coopers Mexican cerveza
1kg light dry malt extract
0.5kg dextrose
SAFlager S-23 yeast
15g cascade hops pellets @ 20mins

O.G 1045 F.G 1007 Alcohol content: 5.6%

23L

it has only been in the bottle for 9 days now. had one yesterday still quite sweet due to the unfermented priming sugar and carbonation isn't quite there yet. the rotten egg smell/taste is still very prominant. i'll try one in another couple of weeks when it is carbonated and the egg smell has disapated more. should be a good beer.

I'm going to do Coopers Mexican Cerveza soon as summer is approaching and i need a refreshing beer to drink during those long cricket test matches.
I was thinking of adding the kit with 1.5kg LME, but i'm not sure about the quantites and times of adding hops, and the types of yeast to use.

I dont really care about the alcohol content as long as its above 4.5%

I did this recipe the other week and have just bottled today.

Very sweet in smell and taste at first but I think will be excellent after a few weeks.

My local HBS recommended the Saaz Hop flowers for a more "Citrus taste".

Mexican:
Brewed 12/9/06 SG Not taken...sorry too many ambers
Coopers Mexican can
1KG Dex  Trust me  worked b4
Saaz flowers 2.5 heaped(chunks) of the Saaz flowers at Brew....strained in to avoid chunks. These were heated for 15 Minutes b4 adding at about 85 degrees.
Yeast, standard. Yeast put in 25 degree water mug for 10 minutes to help kick along.

Racked 17/9/06 and added 4 teaspoons of Saaz flowers (chunked) into brew. These were heated for 15 Minutes b4 adding at about 85 degrees. Chunks and all in this time.

Racked yesterday 10/10/06 (Love holidays) :D just to remove chunks and avoid clogging of the tap.

Bottled today 11/10/06

FG is 1009 not that this helps much as I did not take a starter.

Cheers

I've got a tin of Coopers Mexican in the cupboard (Woolies special!), I usuallly use 100% malt in all my beers (english beer is usually my style), but a malty Mexican beer seems a little strange to me.

How does it turn out using 1.5kg LDME?

Mine tastes great and my brother rates it my best yet.

Had a few on boxing day.

Is a sweet beer with a refreshing taste. No bitterness at all. :?

Yeah Boonie, I found mine to be really lightly hopped (didn't add any) and not a bad kit overall.

For those asking how it goes with malt I'd say if you really want the Corona taste don't add any extra malt or maltodextrin. I'd just use dextrose. On the other hand if you want some body and maltiness in your beer then go ahead it turns out well.

hi all
im a reasonably new brewer and have recently made a coopers pale ale which tasted great. The only problem was that it tasted a bit light and lacked a bite to it. i used the brew enhancer 2
in future batches should i add some extra dextrose to make the taste stronger and increase the alcohol content or would doin this spoil the brew?

It wouldnt make it taste any stronger it would just alchohol content and possibly dry it out a bit, if you want more "bite" then this would be in the hops and for more general flavour and sweetness then go all malt
Cheers
