I have the following:

1 can of Morgans stockmans draught
1kg of LDME
50 gm of 12.2 % AA Chinoock Hops
50 gm of 8.8 %AA Amarillo
US 56 yeast

I don't want a too bitter beer but it needs to have a bit of bite.

I can get to a store to buy additional ingredients.

My main query is of much of the hops do I use and at what times.

Appreciate any thoughts out there, I have just got into boiling hops and steeping grains.

its really a personal preference i think, what type of beer are you trying to make? if its a draught then in my opinion they are not extremely hoppy and you would usually use a lager yeast, for a normal kit and kilo that sounds like alot of hops for any brew but once again its up to your tastes and preference :lol: :lol:

When I used to make K&K I made a recipe using basically the same ingredients. The stockmans draft is pretty good, with all malt adding the chinook and cascade you can get a very reasonable beer, in the style of an APA.

I suggest that you boil some of the malt 1:10 ratio with water then add the hops, I would boil for 20minutes adding the hops as per schedule detailed. Add 10g of each at 20mins, 10mins and flame out, then decide if you want to dry hop after tasting upon near completion of ferment. This schedule will add a little bitterness but alot of flavour and aroma.

For more aroma try the dry hopping but as I said taste before hand.

Thanks AC.

I was hoping for an APA style but didn't want it too bitter with the Chinook.

The kit has approx. 28 IBU, with these hops added any idea on what the likely IBU at the end will be?

Just curious really and keen to find out how this is worked out.

Humm sry the AA% is up there, with the 20minute boil you are likley to get 10-15 more IBU's, possibly slightly more which would make the total IBU's 40+.
If this is a little high try 10mins, 5mins at flame out, same quantities She'll be nice.

I don't mind a bitter beer so I'll go the whole hog.

If it's too bitter no one else but me will drink it!!! Not a bad problem to have.

I guess it will also mellow over time.

I finally made this beer the other day.

I think I boiled the first addition for 25 mins so it may be quite bitter.

After about 3 days fermenting it has an awesome smell and I didn't dry hop only added at flame out.

It is bitter but that should subside.

I am really looking forward to tasting this one! Will leave it for 3 months as I have got a good stock pile and can't beleive how much better my older beers taste, especially the 3 - 6 month ones.

I have tried this after 3 or so weeks in the bottle and it is fantastic.

The citrus taste and aroma is awesome.

Think it might be close to LCPA but haven't had one for a while.

Definately the right colour.
