First extract

I did my first extract earlier today and here is the recipe I used.

1kg choc malt extract
1kg black roasted malt extract
150g choc grains steeped for 30mins
30g Cascade (60 min)
10g Cascade (20 min)
10g Cascade (10 min)
10g Cascade (flame out)
Safale S-04
Made to 17L

Any comments or suggestions would be greatly appreciated.

Hi Mate,
Thats a whole lot of roasted dark malt, it is likely to taste very bitter and roasted. I hope it turns out well for you but I would suggest that you try some pale malt extract as a base and then add 250g of each the choc and black malts.

Black roasted malt when used to excess can give you a burnt charcoal taste, so use it sparingly.

That's obviously a stout, but the hops are a bit strange... what's the IBU on that? I would probably have gone for something a bit closer to style, probably british bittering and finishing hops, something like Challenger for bittering and Goldings or Fuggles for finishing.

Having said that, it'll definitely be interesting, and probably taste pretty good too! :)

I'm not really worried about styles also, why restrict yourself inside a certain style. I calculated the IBU at 32.

Well I've sampled a bit of it and have not found the black roasted malt overpowering.

Cascade might compliment the burnt taste with it's zesty freshness!

I find the choc grains roasty flavours come out late in the fermentation period.
