bellevue kriek

bellevue kriek

hey everyone, just about to start my third brew and my wife is a massive fan of bellevue kriek. has anyone seen a recipe for this, or can give me starting points on where to go for this one...

The Bellevue Kriek is a Lambic, so its almost impossible to perfectly replicate (unless you want to sacrifice your fermenter to the Wyeast Lambic blend yeast).

I suggest making a Coopers Draught with 1kg of LDME, and then adding about 1-2kg of cherries when you rack to secondary for about a week.

It's that bad (on the fermenter)??

i'v not used the blend personally but is very hard (almost impossible) to fully get out of your fermenter, especially plastic ones so all brews done in this fermenter from then on will most likely have a lambic infection

Nothing a strong bleach treatment will fix?

Or maybe you could throw in some 'topical ointment' from the chemists.....

The issue I think is that plastic absorbs to some extent, but these Lambic yeasts must be some tough cookies to survive a sanitising!

Not cheap. I did the "Triple" and had to wait, as taste improved dramatically over time.

Never had a bellevue that I can remember, but I imagine this would be a good starting point.

I did a Strawberry with Coopers Blonde and it turned out great.
