I wouldnt boil the hops for to long as the kits will make it bitter enough but 20 should be fine and i would also leave out the dex but everything else looks fine, there are a few blokes on here that have done this one and from memory i think they were all pleased with it

Sounds good.

I recently did a 2 can-er of stout/dark ale + choc malt + oats. It's bloody fantastic (after leaving it for a while so the bitterness tames). This should be good with the extra hops, but I don't know if the fancier yeast will make that much difference over using the kit yeasts.

It does

30-40% of the way your beer turns out is up to the yeast, use a kit one and it will be good but use a good quality yeast and it will be bloody fantastic, you could even try this one with a liquid irish ale yeast and see the difference if you wanted to be adventurous

No complaints about the smell in my house.....

Not even when I lost 15L of my brew through leakage onto the timber floor in the rumpus room (don't panic - it was only a Spicy Ghost....). Just glad that we don't have carpet in there......

Interesting point about the yeast too - what Safale yeast would you guys recommend for this brew?

S-04. But brewing with S-23 in the low 20's gives a good result with noticibly less krausen.

Timmy, what did you do with the oats? I'm very keen to get a variation of this one underway for St Paddy's day (yeah I'm cutting it a bit fine)

All ready for sunday!
Scored the last tin of Stout at Woolies last night for $8.99.
Just enough change in my homebrew piggy bank too.

I find I get the complaints too. And my wife is also pregnant! They get heightened senses while pregnant apparently.

I know exactly what you are saying.

I made my wife sniff a freshly opened pack of Nelson Sauvin last year while preggers - she almost yocked. 7 or so months later, I used it again in another brew. She had a taste of my beer and almost threw up again!
Ahh the power of NS!

BTW, Due to the aroma's that go with brewing, I've been banned from brewing at night, boiling wort inside, boiling at all while she's home, washing the fermenter trub down the laundry drain, and sterilising bottles in the laundry tub. Talk about workplace restrictions!!!

My Australia Day Stout was based on a can of Coopers Stout and a Can of Dark Ale. I pitched some S-04 dregs from a bastardisation of a can of Real Ale (I've waffled about it somewhere here) into it and it got quite excited. I only bottled it last Friday.

Stout - not good for the impatient.

Well, hopefully my Impatient Oatmeal Stout will be okay. It's sitting in a secondary at the moment awaiting bottling.
