Cascade Chocolate mahogany

Post by red dog »

I'm new to brewing only starting this year. First brew was a morgan's pilsner which turned out OK. Second batch was the mahogany porter from cascade. I've never really been a dark aledrinker but this seemed to be a good looking drop. Bottled it on Sunday so will be about 6 weeks before i open it. Has any one brewed this and just wondering what they thought of it.

Give it 3 months in the bottle. I did it and found it very ordinary within the first 3 months. Left most of it for longer and at 6 months it was a suburb drop.

Definitely one of my (and everyone who's tried it) favourite kits. Tends to be hard to find sometimes, so I stock up to make sure I never run out! :)

I've seen the Cascade kits at my local Coles or Woollies. But can't remember which one of them it was.

A homebrew is like a fart, only the brewer thinks it's great.

I have made this kit several times and have always found it to be a great drop. My favorite recipe for it is:

1 can of Cascade Mahogany Porter
1 KG of Dark dry malt
500gm of Yellowbox honey
15gm of Cascade hops

Ferment with Safale. Bottle and leave for 3 months in bottle.

Strange, I have brewed CMP 3 times, each time with different adjuncts and each time FG has not dropped below 1.020. That was with the included yeast though.

That's not really strange. It's got a fair bit of body.

When it's fermented with good malt, honey and a decent yeast it is certainly a good gutsy winetr brew.
