Coopers Bitter

I did a simple brew of this recently with just the Cooper's Bitter kit, 1kg of Cooper's BE 2 and topped up to 23L.
It took 12 days in the primary at 16-18C. Bulk primed with only a 1/3 cup of dextrose boiled in an equal amount of water because I suspected some long chain sugars were still being munched up even after 12 days, as, the airlock still had some very slow residual activity. I was moving house and couldn't wait any longer to bottle. After 3 weeks carbonation is just right at winter room temperature, around 10-15C but quite low at fridge temperature of 4C. Flavour at room temperature is very strong (less so when chilled) but not in a bad way. It has an almost roasted woodiness to it that tastes a little like a bitter stout, although it doesn't have the body or ultra dark colour of a stout. It's more of a deep amber or copper colour.
A highly recommended and simple brew for all hop heads of any brewing experience.

coopers bitter english style
for a northern english bitter style try this
1 can of coopers bitter, with
500gm dark malt dry
500gm light malt dry
25 gm fuggles
thats its nothing else to add, all malt and good creamy head
with reddish tinge

Zuma, the POR and Cluster make a good hop combination, for mine.Zuma wrote:Just put a Coopers Bitter On.

Steeped
120gm x Crystal Malt
120gm x Wheat Malt
10gm x Pride of Ringwood
15gm x Cluster Hops
Looks ok.
Last two partials I did in each I used 40g. and 20g. respectively, with 20g. Cascade to finish. Made a nice beer.
I think the POR is a very underrated hop, maybe because it`s been around so long and is cheaper than the newer varieties.

Concur Ryan.
If you talk to to Ross (on the spot Ross) you will find the biggest problem with POR is oxidation. It goes South in a hurry and often gives bad flavours if it isn't fresh.

Yeah, I can imagine POR giving a good beer, and there are lots of people who really love it (especially in the Coopers Pale). My problem with it is that it reminds me of the smell that wafts out of the less reputable pubs around my area... I guess so much VB has been spilled into the carpet that they've become impregnated with horrible off-POR smell!
