This can be done. Some Scottish ales have been made in this manner. You can over do it & Caramelise (probably not the correct term) the wort though. Which will darken & sweeten the beer. I kid, of course, but this is for my edification as a future brewmeister...what is the longest period of time that anyone has boiled, or should boil, the wort, and what damage would occur if this were to be taken to excess?
The longest I've boiled for is 120min with the 1st hop addition at 90min.
