Northern English bitter style

For nice northern english style bitter

1 can coopers bitter

500gm dark dry malt
500gm light dry malt
25 gm fuggles hops

thats it.

in pot boil 2 litres of water combine
both dark & light malt together
until all one mixture
then add 25 grams of fuggles hops
for 10 mins only turn off the flame

stir well, then add the coopers bitter
stir in good

add to fermenter up 19 litres stir in yeast close lid
wait one week, then bottle or rack to secondary
wait 2 more weeks and you can open a bottle if you wish

taste is very good, a huge head when poured out into glass
when you
hold up your pint glasses to the light you see a reddish tinge

all up ends at around 5.6% alc

Do you reckon that 1kg of LDME + some steeped crystal would do the same job?

Isn't DDME a mixture of roasted malt, crystal and LDME? I've never actually been able to find out, and I think that different manufacturers use different ingredients, anyway.

How much dex for bottling or did you bulk prime, if bulk, 150-180?

Thanks boonie and timmy for the welcome back,

boonie i use 4 carb drops in each 2litre coke bottle
and 2 carb drop per coopers PET bottles
for the english bitter brew,
i haven't used dex to prime any of the bottles yet.

but i find the 2litre coke bottles much easier to fill almost to the top
with the brew and they all get stored in a dark cupboard,
and one month on they are still very good to drink.

timmy i don't know about the cyrstal malt you asked about
but the malt i use
from brewcraft i think might have already have the crystal malt in it.

I've been using 1.25L coke bottles for some brews and they have turned out great. Just keep em in the dark till your ready to drink.

I was told to use 4 carb drops for them though and they've carbed up well, hope i'm not over carbing? :?

Sounds like it would work out quite well. For those bulk priming I reckon about 150g @ 18C goes well for this style.

rwh, I'm not sure what's in DDME I guess I thought it was just kilned for longer or whatever...anyone have a list of what's in it?

Bottles this one over the weekend with about half the amount of priming sugar.. (to hopefully keep with the style)

Tasted fantastic when taking the FG.. Nice and bitter.

Me too. Must be brew of the week! I did this one last Saturday, with a little variation:

1 can of Coopers Bitter
1 Kg G&G 50/50 (500g dex, 500g LDME)
250g maltodextrin

2 x 7g packs of Coopers yeast.

Its day 5 and the airlock has stopped bubbling.
I plan to dry hop with 25g of Fuggles in a day or two.

(I've also hot some hallertau hops in the fridge, but I think the Fuggles will go better, any thoughts?)

I would go with the fuggles and keep the hallertau for a lager or perhaps a Belgian?

Yes well I am very keen on doing a Belgian, something like a Leffe Brun. But that's for another thread. But thanks for your input Porridge re the Fuggles - I think it's the way to go. I was thinking of dry hopping about 30 grams. I've not dry hopped before. I believe it will be more aromatic, which I really like.

Dj, glad you liked the english bitter its one of my favourite brews at the
moment,

sometimes if you can add more dark malt then light malt, you can
vary the taste somewhat to quite a lovely flavour
thanks to the fuggles hops

don't forget to take some pics of your brew , especially after your cracked
one open, you can share with everyone

Should i use the yeast supplied or should i grab another yeast from the HBS?? If i use the one supplied what the best temp range to brew this at?? Is the kit yeast a ale or lager?

This sounds like a pretty nice recipe. Top work Ben.d, it's on my list.
I've done the bitter once before with a BE2, 150g choc grain, 200g molasses and about 20g goldings... turned out dark, bitter, and interesting. Wouldn't do it again in a hurry, but it wasn't too bad.

S-04 would work well in this.

Addition of some caramalt/crystal and maybe some EKG but that may be more south than north. :lol:

Just dry hopped by english bitter in the keg with an additional 10g of EKG and its an incredible drop.

recipe was
1 can Grumpys 30 IBU
1.7 kg Grumpys Pale Malt Extract
250g Bairds Medium Crystal malt (170 EBC) - steeped
15 g EKG @ 15 mins
15 g EKG @ 5 mins
S-04 yeast
dry hop 10 g EKG at rack

Sub the grumpys tins for a cooper bitter and a 1.5kg of coopers LME if you cant make it to grumpys.

Its on tap with my modified Boonies LCPA clone and its giving it a run for its money!

That recipe sounds pretty good to me.

I like ben dovers recipe too.

On a seperate matter, man I am getting sick of bottling.

I think I will just have to spend some cash to save time......sorry to hijack thread ben.d, It's just that I bottled another 30 tonight, racked a lager and threw in fridge and I have another 60 to bottle tomorrow :wink:
