Just do not use the original yeast.

My mate gave me a can of Blackrock, no yeast, but out of date.

Dunno what yeast I'm going yet or mix of malts or hops but it was free...... :P
He's keen to see what I make of it, dunno why , mine are OK and my other mates love it, but he's yet to try a HB of mine yet  He's heard they are OK.....I'm waiting for that special brew to give him  .Something awesome, the LCPA is awesome but the ones I have done lately have been lacking that something, nice but not hit me in the face "that's awesome", I have a Coopers that I made.....

Shite, am I still typing, sorry way off topic.........

Do any type of lager yeast with the Bavarian.

Safale or Saflager for the Lion Nathan. Hops, go some Cascade, Saaz or Chinnok IMO. 15g @ 1 hr 15g@ 30 and 15g@ 15 if you love a hoppy beer....like me

Cheers

Boonie

I'll stop ranting now, 6 schooners and look at me rattle on
A homebrew is like a fart, only the brewer thinks it's great.
Give me a flying headbutt.......

Out of date kits are fine, yeah dont use the kit yeast ( not that i would anyway regardless of age) but the worst as far as i know is the old ones will come out a little darker than they usually would
Cheers
