I'm going to take advantage of the 20% off at G&G and order some stuff for my first extract (if that's what you call it) brew. I've done TCB wetpaks before, but they just send you the grain & hops without letting you know what they are. I'm hoping to brew a lager, something similar to the TCB Southern Lager.

Anyone who has a good lager recipe please let me know. I'm going to have two empty carboys next week, so a couple of recipes would be good.

A Extract Bohemian Pilsner is here

A good German Pils:

3kg DME
250g Pilsner grain steeped 30mins at 65°C (add 100g crystal too if you like)

30g Hallertau 60min
15g Saaz 30mins
15g Saaz 5mins
(for whole wort boil)

1.5 - 2L starter of a good Liquid Lager yeast

Rack and lager for as long as you can wait.

What if i'm only boiling half my wort? Do I halve the hop additions?

you have to boil the hops with the same ratio of malt/water as you would have in the final mixture...

what i tend to do is...

If i'm going to put 3.5kg of malt/grain all up in my brew, and i have a 8 litre pot, i chuck 1kg of malt in with about 6 litres of water... boil... add the hops at the right intervals, and about 5 minutes before the end of the boil, add hte rest of the malt...

cool and all that... add hte stuff to the fermenter, and make up to about 21L....

If you dont do that.... you wont get the same ammount of hop utliisation... if you were to add all the malt at hte start, and then boil, and add the hops, instead of a bitterness of 30, you'd get about half that....

Cheers James, handy advice. So I just work out what percentage of my total (22litres) i'm boiling, and add this percentage of my total malt to the boil and add the rest of the malt at flame out?

yeh mate thats pretty much it...

i use this method with beersmith too, so i can get the right IBUs and still get the right ammounts of malt, colour, and SG needed for the particular style of beer too....

I would prolly boil the malt for a few minutes just to ensure sterilisation...

I have only learnt of this method recently, and have only made one beer since learning, but it seems that it is the way to go for small boil volumes.

I do this, usually my boils are 12L but i got lazy last time and did a 2L boil - added about 250g of LME to 2L of water and hopped as normal then dumped in the rest of the malt and kit at flameout.

No need to boil malt to sanitise it, just dissolve it in boiling water.

Usually aim for a gravity of 1040-1050 depending on beer style.
