Extract American Pale Ale

G'day all, long time reader first time poster.
I'm attempting my second all extract brew, I've found a recipe from palmers site and will loosely base my recipe on it due to ingredient availability:
Palmers
3 kg. of Pale Malt Extract (syrup)
.250 kg. of Crystal 60L Malt
21 gr of Northern Brewer (9%) at 60 min.
21 gr of Cascade (7%) at 30 minutes
21 gr of Cascade (7%) at 15 minutes

Mine
3 kg Coopers LLME.
0.250 kg Crystal 60L Malt.
21 gr Simcoe (11.9%) 50 min.
21 gr Amarillo (8.8%) 30 min.
21 gr Amarillo (8.8%) 15 min.
S-05

Just wanting to hear any thoughts on this recipe from you brew boffins.

Can't see you going too far wrong with that. What volume is your boil?

I usually end up 20/20/20 Amarillo or such like, but that is more to do with 60gm packets of hop pellets I get from the local shop.

Hi Greg , I am planing on doing 10Lt boil, and also only boiling half the malt and adding the other half at 5 min. or there abouts

Sounds good. Only comment I'd make is it might be worth backing off on your bittering hops a little to account for the higher AA%. 21/12*9=16 grams. Depends on your boil volume being the same as Palmer's though.

I think Palmers uses 3 Gallon (11.13 Lt) boil, so would reducing it by 1.13 Lt have much effect :?:

They're great links rwh, thanks. Do you know of any calculators that use grams instead of ounces (that I don't have to pay for, yes I know i'm a cheap bastard)?

But it isn't as good as the one I linked to before. I just normally remember that:

1oz = 28g
5 gallons = 19L
6 gallons = 23L

Yeah great links, after having a play in the IBU calc. I think I will reduce all hop weights to 16 gram instead of 21 gram which will give me roughly an IBU of 49 (I do like bitter beer ). Palmers recipe was 37 IBU, so 49 is close enough :lol:

Go for it.
I recently made a very similar beer, with the hops done as follow:
14 gr Chinook (12%) 60 min boil
15 gr Cascade (5.8%) 30 min boil
30 gr Cascade (5.8%) 15 min boil
I also added Crystal grain 230 gr for a little complexity and malt character.
Turned out great. Quite hoppy at first, with that typical Cascade citrussy flavour / aroma, but that is settling down now. Very clean beer, no can twang at all, but it was fermented with a WLP001 liquid yeast.

hey warra, thats almost exactly the same as my "house brew".

1 Tin Coppers Light Malt
1 Tin Wheat Malt
+ hops (maybe a little more of each :)) as you described.. and US-56 (05)

its my version of boonies LCPA.

I ended up putting down:
3 kg Coopers LLME.
0.250 kg Crystal 60L Malt. steeped 30 min.
16 gr Simcoe (11.9%) 60min.
16 gr Amarillo (8.8%) 30 min.
16 gr Amarillo (8.8%) 15 min.
S-05 Safale.
+ 400 gr dextrose. just for fun
10 Lt Boil
I willl leave in primary for 2 weeks then bottle.
Will update as this brew progress......I think I can hear an IPA calling my name.......

I used a can each of Coopers light and amber liquid malt. It was an attempt at an APA, but probably turned out more amber than pale. Good drop though.
Yeah, Boonie's LCPA recipe is a good one, I've also made that recently, and it's drinking beautifully. LCPA is, I think, a clone of SNPA, which is an APA anyway. Never mind all that, they're all good.
I'm about to put down an AG SNPA clone, got Monday set aside for that.
How's Berowra village. Do you call in on the guys at Asquith? I used to live at Hornsby Heights, and then Warrawee, before the move up the coast.

Mate its awesome, you just missed the woodchop :)

Yeah Danzar and I (amongst others) frequent the guys @ Asquith.. good shop. Get all my gear bar hops there.

Tasted my brew today, and it's delicious, a citrusy, fruity explosion in your mouth. Before I realised on was on my second tallie, it wasn't as bitter as I had hoped for though.
Truth is I chickened out while making this bad boy and reduced the Simcoe hop addition too much.
I'll definitly make this again but I'll be using 21 grams of Simcoe next time.

P.S: Any one know where to buy hop seeds

I would have thought that bitterness would have been about right, in fact I thought 21g might be a bit too much for a 60m boil.

Simcoe is always going to give a very smooth bittering too which can sometimes be a bit softer than some of the others, but I think that is a good thing!!
