Hi Peter,

Thanks for the HB that you left for me at Charlestown Home Brew Inn, formerly known as Beer n Gear (Plug ).

I have had one and it was nice, not too carbonated. The other is still sitting in the fridge at work for Friday arvo drinks.

What was your recipe for that one? very drinkable

I will return the favour, I will have to go to the collection under the house and extract a beer (pardon the pun) worthy to give you.

Your LCPA is a particular favourite of mine, and I read that you did a Strawberry, so your opinion is appreciated.

I am not so sure about the style myself, but my wife thinks it quite pleasant and is encouraging me to enter it in the Bitter & Twisted Beer Festival.

O.K. the recipe for my Dessert Cherry Beer:

1 x Can Morgans Canadian Light
300gm BE1
500gm Lactose
2/3 Cup Lager Grain (steeped)
No boiling, just dissolving in very hot water.
Made up to 12.5 Litres

OG 1066
Primary for 7 days then racked onto jar Morello cherries. This started another vigorous fermentation period. Difficult to estimate what the final alcohol content will be … estimating around 9%.
Added food colouring to improve colour at bulk priming with 170gm Dextrose.

I was looking for a sweet, strong cherry beer (hence the lactose and only 12.5 litres).

Whilst it is still strong, I find the flavour and style (Canadian Light?) quite refreshing, but one is enough for me, I prefer a more "normal" beer. But it could be a hit with the ladies.

How big was the jar of cherries?!?!

Also what exactly was the lager grain?

I am on a fruit beer kick lately and may have a go at something like this.

A 600g (from memory) jar Morello Cherries (from Woolies ... a couple of brands there, the same size jars) including the sugar syrup they are packed in.

Half a small bottle red food colouring (this was purely a vanity thing, as I felt it should look red).

Stil didn't catch what grain you used? Something like Carapils or Crystal malt maybe?

Also with grain, after you strain the grain from the steep you should at least bring it to the boil for a minute or two to make sure you kill any bugs that were hanging out in/on the grains.

Good call, I missed the 12.5L bit, so the 170gm seemed normal

I got so excited that anyone was interested in my own brew that I spouted my normal dextrose levels for 22 litres.

Apologies all around. It was really 90gm.

The grain came from the local HBS and is described as Lager Malt grain.

Fair enough, conventional lager malt is not steepable so your process wouldn't really be enough to extract anything from it. You would have been much better off with a steepable grain like carapils, crystal, etc. It is possible all you achieved was to extract tanins from the grain, try it with a spec grain next time and you may find this brew is even better than you thought!

Well Pete, I must be a lady , cause I liked it very much.

It's not overpowering in the taste and is a slightly sweet beer IMO.

I was shocked too when you said 170g dex, then I read further. The carbonation is perfect, had a slight pssh when opened.

Hence the clear bottle to show the colour.

I'm a bit concerned at 9% as I drove home 15 minutes after having it at work ........."Have you had anything to drink tonight sir"

I used fresh Strawberries for mine and it too was awesome, but I have none of the original left, they were that nice . I have just made another batch but after a couple of weeks was a little bitter. I have one in the freezer now and if it is OK, I will give you a couple.

In the meantime, I have checked my collection to see if there is one that is worthy to give away...IE, don't want to give you a bland beer.

I have pulled out 3 different types tonight that are in the freezer and if they are Ok, I will give them to the HBS to give to you....plus Hilton the HBS guy.

It will either be
ND Brewing Amarillo Ale
My version of Golden Ale (2nd attempt)
and/or the strawberry
