Here at Pot of Grass Brewhouse we are warming the kettle and cleaning the fermenter for the next BIG THING...

Thats right, the ingredients are now off the maltings floor and down in my garage..

The new super dooper chiller (aka Jack Sparrow's parents old fridge) is under testing (seems to be able to maintain a max temp of 20 degrees unmodified... purffffect!) and all being well we will start tonight.

The cosmic ingredients:
1.7kg Coopers dark kit
1kg Morgan's Chocolate malt extract
500g coopers amber malt extract <----OOOPS!
500g Maltcraft light crystal malt Steeped
500g Thomas Fawcett & sons Pale chocolate and malt steeped
Dark matter added at 5 minutes to flame which consists of:
*2 (may add more to taste at racking) chopped and brused vanilla pods
*1 whole fresh numeg which I am about to grind
*1 cinnamon stick cut and coursely ground

12g of Fuggles added 5 mins before flame out

Fermentis Safbrew T-58 yeast (Saccharomyces Cerevisiae) which is similar to a belgian yeast (not enough guts to go the chimay route yet)

Plan to ferment at 19 degrees...

1045...
~8l boil which was cooled by dunking the kettle/stockpot in an ice slurry
Wort added to chilled home brand spring water
Yeast pitched at 23 degrees


Wort tastes BRILLIANT!!!!!!!!!!!!!!!

Often (keeping in mind this is my 4th beer) I taste the wort and think "The yeast will make this drinkable" and it usually does...

This one I would be pefectly happy if the yeast just turned the sugar to alc...

The light chocolate malt imparted sooooooo much character as did the nutmeg...

whole nutmeg is VERY aromatic...

The spec grains dont add much sugar, just flavour (boy they smelt nice!!)

yeah i know, just thought it would be slightly larger with almost 4000 fermentables.

And see what I get

I poured the wort on the water , but I ran some through the tap before drawing a sample... will do another test before bed...

Something is already happening (positive airlock pressure...)

OG :1061

FG :1017

6.6%

have you tried Beersmith ?

oops... 500g of the coopers extract... see edit...

No... what is it? is it a proggy? I run linux so if it is windows executable it is a pain (unless they do a pocket pc version..)

Oops... I forgot to allow for the fact I was opening the door to get stuff out during my tests...

Ferm is sitting at 15 degrees... barely with in the range for the yeast

Great airlock activity and a nice kraseun already forming... Dropped 5 points overnight (~14 hrs)

Bottled today... Bulk primed With 90g of dex plus an extra two vanilla beans. It is yummy! fg of 1015
