Coopers Mexican

Post by Timmsy »

I have a can of this lurking at home and i always tend to shove it at the back as the last time i made this i wasnt happy with it so i think its about time i tackle this but hoping it up and adding what ever. So guys what would you recomend? I have a brew fridge so i can keep the temps down if need be.

Funny you should mention it. I have one too. :-)

On the weekend, was moving stuff around and found a box containing 8 longies of beer that I brewed Nov'06. From my notes:

1.7kg tin coopers cerveza,
1kg LDME
12.5g cascade boiled with LDME in 5L for 5min
S04 yeast.

OG 1.045, FG 1.010

Opened one last night: Not much like corona, but pretty nice none the less. The touch of cascade lifts it nicely.

cheers,
T.

Coopers Kit
BE2
Galena hops
S04

Easiest and best Cerveza I ever made! I had quite a few cracks at this beer and fiddled quite a bit, but I found simple was best here.
Prost and happy brewing!

I think I steeped 15g in boiling water in the bottom of the fermentor for 10 minutes or so before I added the kit.

I make a Steam Mexican which comes out lovely - really complex flavours.

Coopers Mexican kit
1kg Euro sugar (600g LDM, 200g lactose, 200g dextrose)
500g LDM
250g Dextrose
Cascade hops 12gm dry-hopped
Dry enzyme
Saflager yeast

Brewed at 16-18 celsius with the Lager yeast similar to San Fran steam beers. And about 5.8% alcohol, highish but good in this one.

I love it. 8)

I made this one up today:

1 Cooper's Mexican Cerveza
1 Cooper's BE2
12g of Mt. Hood hops [5.2AA] boiled for 5 minutes in the brewing water, then added the two ingredients above
2 packets of Cooper's pilsner/lager yeast swapped out from previous brews that I used liquid yeast in.

Made this kit as per kit instructions and nothing else last year, and my notes advised to add some flavor hops.

We'll see how it turns out in about 6 weeks.

Sounds good. So where do you get Galena hops???? Seems no brew shops stock it, and some have never even heard of it at all.

Thanks Kev.

I'll have to order some online it seems.
Got a bit of a shock when the old guy at the HB shop had no idea about this variety of hop...
