just curious to know if anyone has made batch of Chimay and if so how successful was it.
i've just started a batch with a yeast starter made from the Chimay Triple. I'm hoping its going to be up there with the real thing.

Nope, but I've been planning on doing one in the next month using lethaldogs recipe (somewhere in this thread http://www.homebrewandbeer.com/forum/vi ... 31&start=0 ). Let me know how yours turns out. I'm hoping to age most of mine till at least winter.

I think KEG did a Chimay Blue clone? I can't seem to find anything with this new search tool :(

cheers for that link tim, lethaldog had a good recipie for the chimay blue, im gonna try it for my next batch, like lethadog i too was skeptical about my starter, i had it going for a week with out much action, when pitched after a day it was off, and its looking good.

I did Leathals Chimay recipe It is great. My starter was dubious. But when I pitched it it really went off. Fantastic drop now after a couple of months in the bottle.

just tried my chimay clone, bottled on the 24/2/08 using lethal dogs notes, a dammn fine brew, my only downfall is i got greedy and made it to 23 litres instead of 15, making it to 15 must make all the difference, cause at 23 litres its one of my best yet
