2 CAN MOFO !

The Belgian I was trying and am drinking right now as I type is great. It was only my second Malt additive ale so It tasted wierd to start with but now I love it.

Recipe I did:
B/craft Belagian Ale
Light Dry Malt - 1 Kg
Dextrose - 300 g
Corn Syrup - 300 g
Safale/wheat K-97 Yeast

Howdy gregb et al - I just did your recipe (with a twist or two) - was thinking of bulk priming for coopers PET long necks with 300g maltodextrose.

sound reasonable?

don't want bombs or over carbination - just want head.

this brew is ace already in the fermenter - nice and bitter.

:shock: No! First, are you talking about maltodextrin or dextrose? If the first, you will have flat, soapy beer. If the second, you'll blow yourself up. I would prime with 180g of dextrose for 23L of beer. That gives you a carbonation in the "high" range.

maltodextrin - the non-fermentable corn syrup.....

DON'T want high fizz in this imperial stout, want a good long lasting head.....

Aaah, now I'm with you. I'd try steeping some carapils if I was you, or adding some dry wheat malt. Both improve head retention.

Just to check - you are going to prime with some type of fermentable sugar aren't you? The maltodextrine or steeped carapils will aid in head retention and body but won't carbonate.

I don't need any more body in this beast. :shock:

perhaps I will go with maltodex but at a lesser quantity (I have no carapils at the mo).

Bulk prime with malt instead of sugar. you get a fluffy head that lasts, and you get nice tiny bubbles...

I use it for all my english ales and IPAs. lovely

Don't waste your maltodextrins as a priming sugar - maltodextrin is not all that good for late adjunct additions. You won't get much carbonation or fizz in the beer, because the corn syrup is dextrinous, and so it won't completely ferment which means it adds body but more importantly may lead to some undesireable flavours (eg, soapyness as rwh correctly suggests) in the final product.

Carapils is, of course, the grain equivalent to maltodextrin and it too is not suitable for priming before bottling or kegging. If you want to improve the head of the beer, prime with malt and make sure you use some Carapils / Maltodextrin / Wheat malt when you make the wort, not when you prime the beer.
