what is it with me and extreme stouts...?

in a follow-up of sorts to my earlier milo stout (give it a search, it was a fantastic brew), i'm planning another somewhat experimental stout for the winter months (though by the time i get it bottled and carbonated there probably won't be too much left of winter).
the recipe planned is as followed:
two coopers kits
1kg dark malt (or perhaps the coopers 1.7kg can....hmm...)
200g black patent malt, steeped
30g fuggles @ 30mins
20g fuggles @ 15mins
a yeast that can chew through a fair amount of fermentables. any suggestions?

the ingredients aren't exactly revolutionary, just wondering if such a mix is wise...
my brew calculator isn't working, something to do with the firewall i'm stuck behind (i live in a residential college at a university),
so all i know is that it would be sweet, with some roasted notes and only mildly hoppy, and thats just a guess.
any thoughts?

This turned out quite good.

1 x Coopers Original Series Stout
1 x Coopers Original Series Old Dark Ale
1 x Coopers Original Series Lager
500g Light Dry malt
350g Dextrose.
Top up to 23L

All three yeasts, plus one other Coopers yeast I had laying around.

Watch out for super krausen.

What type of kits are they?

I don't reckon it will be sweet at all!

I have done a two-can stout, with Coopers Stout kit and Tooheys Dark Ale kit. The extra hops from the second kit, rather than just extra malts or sugars made it VERY bitter. I reckon it could well be quite hoppy too, for the same reason. But the bitterness would be pretty strong.

My suggestion, if you want a BIG sweet stout is to use a single kit, plus a kilo of Light Dry Malt, and a kilo of Dark Dry Malt - maybe add 250-500gm maltodextrin.

or lactose since maltodextrin is not sweet it just adds body.

i dont mind a bit of bitterness, but perhaps i'll add a bit of lactose to it. and perhaps taking out the bittering hops would be wise.
should be fun to drink, and at least this one will be safe from marauding mates. thanks for the imput fellas.

the kits are stout kits, just to clarify.

2 coopers stout kits in 23L gives you 77IBU............. thats RIS territory 8)

i think i'll have to head to a computer outside of this dam firewall and have a play around on beersmith.
have a good think about what I'm doing etc.

Is RIS for Russian Imperial Stout?

Yep.

The three can above was brewed as a RIS. It has matured quite well.
A quaffing stout of Coopers Stout & Coopers Dark Ale to 23L is a good winter thing.

I did a Coopers Stout and Coopers Dark Ale brew(in the fermenter at the moment), and I accidently didnt add anything to sweeten it?? :roll:

Have just been taking gravity readings ready to bottle and oh my god, it is bitter.... :oops:

Im thinking of priming the bottles with Raw Sugar to try balance it out a little, its about all I can do... :?

You could also try some lactose, probably boil it in a small amount of water to kill any nasties before you add it. Non-fermentable so won't produce bottle bombs.

well its bottled, tasted dam good out of the fermenter so i'm pretty happy. very sweet. so i bottled 3 longnecks without any priming sugar with a view to leaving them for a few years, just for something different.
but in more exciting news, i checked the homebrew section at the local safeway and coopers stout kits were $8. woah yeah! so i'm gonna put another one on, but i may put a little milo in it this time. last time i did it worked an absolute treat, added a slight sour tang to it which was wonderful. should be good.
