You should, the results are heavenly.
piney, citrusy, and with that sweet honey flavour from the amarillo, all combined on a canvass of munich/crystal/MO, with a hint of melanoiden. If anyone wants the recipe, hit me up. I had a super efficiant mash so i got 23 liters out of this one at 1055, so i think i'll be bottling it and entering it in some comps. I'm super impressed with it. I guess it would end up being an American amber.

Agreed! I have a 50IBU Amber ale with them in it and the pre-kegged sampler tasted excellent!

whoa, 50 ibu? Any other hop and i'd be scared off, but the simcoe bittering is so smooth, that must have a refreshing finish.

I'm about to make an IPA with horizon, centennial, simcoe and amarillo 1064 SG and 64 IBUs... I bought simcoe a while back, but havent used it yet... and also i'm trying to make pale ales with hops other than cascade in it...

I'd pin simcoe as being fairly similar to cascade, in that your still get your citrus only witha more fresh pine flavour as well.
