G'day all,
I've got 5 weeks off and eight kegs to fill. So, I thought I might make a couple of lagers, even though it's summertime. So, I thought, why not make a Dortmunder but ferment it with US-05 / 1056??? I like the clean flavour profile of this yeast and I figure it will do a much better job at 18-20C compared to, say, Wyeast 2124 or 2000. I intend to use some of the 1kg plug of Tettnanger I have as well as the Saaz (czech) pellets.
What say those of you who've brewed lagers with US-05? Did you have to make any adjustments to the hop schedule when you used this strain of yeast?

TL, why dont you use the Cali Lager Yeast?
I have done side by side tastings of a split batch of a beer (lager style), one made with munich lager yeast, and one made with us05. after tasting the one made with munich yeast, the one made with us05 just seemed too fruity... there was nowhere to hide the flavour from the yeast in a beer like that... mind you, i dont know what temp he fermented the us05 at.. you might be right at 18C.

I had thought of using California yeast but I have a budget and thought I could make a couple of pseudo Koelsch's and then use the US-05 slurry to make some amber and pale ales.
I've read somewhere that you can make a reasonable koelsch with US-05 / 1056...

I've done a quasi-koelsch with US-05 and fermented it at 13 degrees over the course of a month. It turned out okay - which surprised me given that most ale yeasts are supposed to go to sleep at about 16 degrees. If I were to do it again I'd use either a K-97 or the proper liquid yeast.
I use US-05 in a variety of ales, and generally I have found that if the fermentation temp is kept low, fruity esters don't appear too much. However, if the temperature gets much above 20 degrees there's a fair chance some fruitiness will appear.

I've also heard that you can make good kolsches with us-05. I'd like to see how it turns out...
If you ever need yeast, i have slants/plates that i can send over... i have about 16 different yeasts now, all growing well...

TL, did one with US 05 a few months back (a veritable volcano krausen even at 18*C) it has offended no-one yet...a little bland for my taste, but non-brewers love it! ian
are cornflakes flaked corn?
