Silly Season Ale

As this is going to be the last beer of the year I thought I'd do something completely different.

1 kilo Dextose desovled in 2 litres boiling water till clear
20 grams centenial 9.5aa for 30mins
turn down to simmer
1 tin Black Rock Extrait de Malt Amber stirred to simmer re-started
Flame out
1 tin Coopers lager ( Green lid)
20 grams Liberty 4.5aa
water to 20 litres
Safale S-04 pitched @ 18c

This will be the first beer I will try racking as the wort appeared to have a lot of particle matter when pouring into the fermenter ( Probably could have been strained into fermenter)

Hi Ron,
A question if I may...The first part of your recipe refers to Dextrose and Centennial hops - did you boil the hops in the dextrose solution? If so, you might find you'll get a better hop isomerisation / extraction efficiency by boiling the hops in a solution that has malt in it. Without going into excessive detail, the hop bittering compounds are "keyed" into the compounds present in malt (and not pure dextrose) and whilst I'm sure you managed to get some benefit from a dextrose only boil, you'd do much better next time to boil the centennial in a solution that has, say, the tin of Black Rock extract in it.

D'oh,
I may have read this a lot of times, I think not, but certainly this is the first time it has actually registered.
I have done a modest number of brews in my two years of brewing here at Chateau Wombat, but have almost allways made hop tea - just water and hops.
While I am happily drinking the results haven't been entirely satisfied with the effect of the hops I have boiled the #$@%$ crap out of.
I should also indicate that I am only assembling beer i.e. can, bag, mini mash, boil a few hops rather than mash tun etc.
Any comment or suggested boil mix would be appreciated.

Dasher,

I think if you can aim for a SG of around 1.040, you should get a reasonable result with your hop boiling.
It's easy to achieve that. Add 1 litre of water to about 100 gr of LDME, and you'll be close.

Some will say to use a SG at about what the OG of your brew will be. If you want to do this, just increase the amount of LDME. It's easy to work out. You know 100 gr in 1 litre gives you 40 points, so if you were to aim for 1.050, you need 25% more LDME, i.e.125 gr.

This is all a bit ball park figuring, but it's close enough for what you want to do.

Further to warra48's good advice, add 10-15% more water to account for evaporation during the boil. If you boil 1L for 20 mins or more, you will end up with a much higher gravity solution than anticipated, so boil at least 1200ml with 100g of malt extract and you should be sweet, pardon the pun!!

Well I Kegged the Silly Season Ale on Monday, put an empty keg in the fridge the day before as the temps up my way have been well over 40, and didn't want to put the cold conditioned beer into a hot keg.

Carb it up Monday night, let it rest till last night and had my first taste, A very nice beer for what is an enhanced K&K, next time I think I'll add 25grams of hops at the boil in stead of 20 or boil for 15mins longer or both, ( or Follow TL's advice and do the Hop boil in the malt) or it could be a little more bitter for my tastes, and it could use a few more bubbles, I suspect tonights glass will have more bubbles as the CO2 further disolves into the beer.

The Beer is not quite as clear as I had hoped from Racking and cold conditioning, but most of my beers have been like this for the first couple of litres from the keg then clear up nicely , It's a nice dark brown colour with great head retention and a nice soft feel in the mouth, quite a few of my other beers have had an initial instant sweet taste before the bitter then dry taste at the back of the mouth, not this one have a mouthful instant smothness followed by a bitterness there is not the dryness in this one.

Anyways, more report on this silly season Ale.

I haven't tried POR hops yet because I haven't found any local and would like to try this beer with those hops.
