Ok, well after my NS Ale was such a huge success i thought i would make another, but this time try a few different things (yes i know i know why mess with something thats alreaqdy proven to be good).
Here was my original recipe:
Final list of ingredients:
1 Can of mexican cerveza
250g of carared
40g of NS Hops
250g of Honey
1kg LLME
Wyeast American Ale
This is the process i used:
5litres water added to the pot.
Water temp bought to between 65 and 75
Carared grains were added in the sock for 45mins.
Liquid was brought to the boil and added 20g of NS Hops.
10 mins later the heat was turned off and the rest of the hops were added
Left for 5 mins.
Added the Honey.
Placed in the ice bath for 10 minutes.
added 6litres of water to the fermenter.
Strained the wort into the fermenter.
Topped up with more filtered water to the 23 litre mark.
Added the yeast at 25 degrees.
OG reading was 1.042
FG reading was 1.012
This was only very slightly cloudy, you could at least see through it and the colour was brilliant.
I changed a few things around and it now reads like this:
1 Can of coopers Real Ale
250g of carared
150g of caramunich
30g of NS Hops
20g of Saaz
250g of Honey
1kg LLME
Wyeast American Ale
5litres added to the pot.
Water temp bought to between 65 and 75
All grains were added in the sock for 60mins.
Liquid was brought to the boil and added 20g of Czech Saaz Hops and 10g of NS Hops.
10 mins later the heat was turned off and the rest of the hops were added (20g NS)
Left for 5 mins.
Placed in the ice bath for 15 minutes.
added 6litres of water to the fermenter.
Strained the wort into the fermenter.
Topped up with more filtered water to the 23 litre mark.
Added the yeast at 24 degrees.
OG reading was 1.044
FG reading was 1.010
Has a slightly browner colour which was to be expected with the real ale can, but its so cloudy it looks like yarra river water... still has very similar aromas, a bit more subdued then the original and the Saaz has given it a bit more bite which is nice so im hoping it will still come out ok but i cant get over the cloudy look

1056 does tend to leave the beer quite cloudy. How long have they been in the bottle? It does usually clear after a few months.

ive only just bottled... the last one wasnt this cloudy when i bottled it... unless its just because its slightly darker in colour
will see how it goes after a month or 2
