If you really want a witbier, then you really need the WLP400 / Wyeast equiv.

In my opinion the wit style is pretty different from a German hefe.

Bizier,
I have never used liquid yeasts only used what i could get my hands on at the time.
Read many posts on the upside of liquids vs dried my intention is to do a side by
comparison of this and the real deal then order a liquid make same brew and test all 3.
Just to satisfy my own curiosity.
One thing i can say starting your dry yeasts sure makes a difference,this brew had krausen
starting after2 hours.

Do this and report back with the news... please.

Another idea is a re-culture from a few bottles bottle of Wicked Elf Witbier or similar, as I believe (from taste) that that particular one is WLP400.

I tried this recipe with some reserves but it's turned out great.


Coopers Brewmaster Wheat
1.5kg can Coopers Wheat Extract
Zest of 2 Oranges
10g Ground Coriander(couldn't find seeds.. should be 20g crushed seeds)
Boil zest and coriander for 10min, strain.
Used kit yeast.

Very nice heady brew. A hit of spice from the coriander. The "scone burner" even likes it.

I did pretty much the same, however I added a bit of halllertau towards the end of the primary. Fantastic beer, although a bit darker than the Hoegaarden that I was trying to duplicate.
