g'day everone hope you're all well!
I was running arond coles for the missus today and came across a can of caccade chocalate mahogoney porter (price roll back actually,they were flogging em off for 9.99) So if anyone's used it before? or can anyone suggest what I can add ,the can just says white sugar but I always want something of better quality to make a great beer.also what yeast should I use and is there any need for things like bakers chocalate or a dark malt extract ect.and last but not least should I run it at 18ltrs or as the can says apreciate any input!

Brewed one of these last year, turned out to be very tasty:
Can of Cascade Porter
1 kg of liquid amber malt
100g chocolate malt (steeped)
500g yellowbox honey
25g cascade hops
Safale S 04
Steeped choccy malt for 30 mins, then boiled this together with amber malt and honey for 30 mins. Added hops for 2 mins, then put the lot into the fermenter with the can. Took a long time to fully ferment for some reason, and ended up about 5.7%. I underprimed it, but its still a very tasty beer (or was....it's all gone now

100g chocolate malt (steeped)
500g yellowbox honey
25g cascade hops
Safale S 04
Steeped choccy malt for 30 mins, then boiled this together with amber malt and honey for 30 mins. Added hops for 2 mins, then put the lot into the fermenter with the can. Took a long time to fully ferment for some reason, and ended up about 5.7%. I underprimed it, but its still a very tasty beer (or was....it's all gone now

Personally, I used to steep my grains at around 70ºC, but don't fret too much over it. You'll be fine even at 80ºC.bangers wrote:o.k. thank you very much I'm off to the hb shop!

Regards to steeping your grains, I just use a simple method that someone suggested on this forum (can't remember who). Use 2/3 boiling water and 1/3 tap water (so if you steep in 1 litre, use around 660 ml boiling water and 330 ml tap water) and let the grain sit for around 30 mins.

that ratio should give you around 65-70 degC which is right on the money.

Just a quick question. If I steep using the 2/3rds boiling water method what temp loss would I expect for the half an hour and is it much of an issue?
And I know its only $5 but is the safale yeast that much better than the kit yeast for this recipe?

I wouldnt worry about temp loss...you are only steeping, not mashing. Yes the Safale O4 is a lot better yeast IMHO. Ferments fast and produces a very clear beer.

Well I put in this brew on Tuesday night. Already bubbling away.
Few points.
I wasn't paying attention when adding the liquid amber malt and poured nearly all of it in. I only added about half the honey not that the honey taste will be noticeable after 30 min boil I'd think.
And I made it up to 22 litres. Thought about going lower than that but just dropped it a little from the 23lts.
Smelt great going in the fermenter and sitting at 18 degrees for the s-04 to do its bit. Wish me luck that it actually turns out ok. I'll try it in a month and then see what its like after 3 months in bottle.

I put this brew in 11 days ago and just got back from holidays whist its been going. It had started to bubble and go before I left and the garage keeps it a constant 18 so I had no worries at all.
What sort of FG should I expect for this though??????????????

Just chiming in with an update on this brew. I did another one a few weeks ago but put in 150g of choc malt grain, 50g black grain and 50g cyrstal malt all steeped for 30 mins in 2L. Sparged with another 2L and boiled. Added this to a 10L boil including the 1kg of amber malt, 500g of honey for 15 mins and 25g of fuggles for 5 mins before flameout. Hydrated S0-04 and feremented at 18 degrees.
In the keg a week ago and its already tasting better than any of my other brews using this can. The chocolate aroma is really great, bitterness is there but not overpowering for a porter, mouthfeel is great and has a great body to it. Recently Coles had these cascade cans on sale for $6.99 and I grabbed three of them
