Old Black Rock Mexican Lager

i start to brew an old kit (4 year after the Best Before date) of Black rock Mexican Lager with a new cooper yeast and the enzyme pack originaly come with the kit. i start it for about 10 days but with 2 cups of LDME , 2 cups of Corn Sugar and 2 cups of white cane sugar instead of 6 cups of corn sugar like the receipe come with the kit. So, i started the batch 10 days ago with an OG of 1.040 and for the last 3 days it's stuck to 1.010 but the airlock still make bubble 4 to 5 time a minute. it is safe to bottle the batch or it is safer to let the beer another few days into the secondary .

If you have stable readings over 3 or so consequtive days, it normally should be done, and ready to bottle. The occasional bubbling is normal and is dissolved CO2 coming out of solution.

The only thing worrying me a tad is that you used the enzyme pack. I would have thought it should have got a bit lower than 1.010, but I've never used the enzyme, so can't speak from personal experience as to how it behaves. Maybe you could let it warm up a bit and see if you can drop a couple of more points.

There's no need to be in a rush to bottle. Anything up to 3 or even 4 weeks in primary is perfectly OK. I never bottle before 2 weeks minimum.

As to racking it out of primary, it's not something I do, unless there's a very good reason for it, such as lagering a Pils etc.
Personally, I don't see the need to rack in normal circumstances, but others may disagree with me. Suffice to say, it's an unending discussion as to the merits or otherwise.

another question . did it can cause problem to use the enzyme kit originaly with the can? (4 year after the best before date) ?

im worried why you waited 4 years to use the can?......you mustn't drink enough :lol:

i just forgot the kit in a box when i move from my apparment to my house. :P
