Hey all,
I have a few out-of-date Coopers Real Ale cans and was thinking of making a toucan IPA. How about this:
2 x Coopers Real Ale cans (~29 IBU's each)
500g LDME
500g Dex
200g Crystal, steeped
Goldings for flavour
Both kit yeasts, rehydrated. If they're dead, use some Wyeast 1028 London Ale
23L
I might also add some brown sugar or treacle for some more kick and extra flavour.
I'd expect to leave it for 6+ months before drinking.
What do you reckon?

Remember IPA is very much about tasting hops, and not just bitterness.
I would add a big bunch of goldings to late boil and also dry hop and pitch 2 sachets of SO4.
