BM, I think they're legal in New Zealand, but only illegal to use in Aus. Don't know about buying or being in possession. My local HBS stocks them. The guys said 'it's borderline'. But I know at least 3 guys at work running them.

Ask Geoff the Lawyer, he should refer to DISTILLATION ACT 1901

It seems as long as the still is under 5 litre capacity it is no worry.

The problem seem to be with the process of distillation, you need a licence @ $100 per annum 31DEC anniversary to make spirits and a whole lot of other restrictions as to premises, equipment, use etc.

The there's the excise (tax) you will have to pay on each litre and that is calculated on % Alc/Vol

My understanding.

Legal in Aus if:

Capacity is 5l or less.
Is used for water distillation and essential oils, not spirits.

However the still to make the distilled water and essential oils can make a base spirit at any % its all in how you make it.

A couple of issues:
1- sacredsite, you raised the initial query which has now been kicked around the schoolyard pretty thoroughly- any response? was anything of use?
2- dogger, I have never heard of using a still for kvass, can you please give us some details?
3- stills in general...ugh.

No not really, only that maybe I should stick to the kits. Don't be so down on the stills, you can make some great liquers if you use the old recipes and not the chemical additives you find in a HBS.
At first I thought I was wrong, but then I realised I'd made a mistake.
