The recipe I have for Hoegaarden calls for boiling the honey for about 30mins.

As for finding Clover Honey, I've looked all over Brisbane and can't find it anywhere so I'm using Yellow Box.

I am reading this while drinking a fairly basic spicy dark ale, which was made from a Coopers dark Ale kit, 1 Kg LDM and 2 tsp cinnamon. I am thinking that some honey would balance out the natural ale bitterness and the spice from the cinamon. But I am thinking a "heavier" honey. Would you rate something like leatherbox as a bit heavier? I think yellowbox is a bit "light". Hope you know what I mean - I have had a few beers and a successful wager on the dogs! AAoooooowwwwww!!

Try this:

Coopers Classic Old Dark Ale
1kg Ultrabrew (500g Light Dry Malt Extract, 250g each Maltodextrin and Dextrose)
500g Leatherwood Honey
Goldings Hop teabag.
Yeast as supplied.
