Let me get this straight. Are you:
1. Allowing the beer to ferment out in primary
2. Racking to secondary, adding a cup of dextrose (boiled in water?)
3. Bottling, and priming with 2 coopers carb drops per longneck?
If so, this is all fine. I personally would leave out the dextrose from step two though as I don't see why it's necessary.

I notice some on here add the dextrose instead of carb drops is this correct?
What are we looking for in the secondary stage tank?
At what stage do you bottle after adding the dex?

From what I've read and been told so far - there's Racking, and there's Bulk Primeing. and they are different and achieve different things I think?
Racking is after fermentation has finished, and means you have less sediment in the bottle.
Bulk priming is just the mixing of sugar/dex in bulk so you don't have to use the drops/scoop. I'm not sure if this means that the beer is again clearer? Or is is just simpler than adding drops?
I was told - that you'de primary ferment, then rack for another week, then rack into another barrel and bulk prime at the same time and bottle straight away. Personally this seems like a lot of work, and the carb drops are pretty simple - so I'm opting to just primary ferment then rack for a week, then use the drops to bottle. Could someone tell me if this defeats the purpose of racking, or if the carb drops leave little/no sediment??

Racking is just the transfer from one vessel to another. So you are racking when bulk priming, transferring to keg, interrupting ferment, etc. I only rack when bulk priming.

Thanks for the input
I have a Coops cerveza almost finished in the brew tub.
I am going to rack it into another tub , let it settle a few days then bottle using 2 carb drops per 740ml bottle.
Am I right so far?

I would rack and leave for 1-2 weeks then bulk prime but apart from that i think you have the idea

Lethaldog leaving racked 1 or 2 weeks in Vic temps might be ok but how about in ambient temps of 36C daily and the brew in a aircon room at 24C?
People melt up here mate you wanna smell em

Basically you just have to do what works for you and at the end of the day you have to work with the conditions you are handed..
In a perfect world everyone would have ideal conditions and brew a perfect beer every time but its not a perfect world now is it..
My suggestion would be to get yourself a cheap ( working ) fridge and a fridgemate and this could ease your worries a little but failing that, just do what you have to and at the end of the day it will still be a good drop

Can you explain to me exactly how you would do for the brew I have got in now?
