This can be done. Some Scottish ales have been made in this manner. You can over do it & Caramelise (probably not the correct term) the wort though. Which will darken & sweeten the beer. I also believe that this can also produce Diacetyl.

The longest I've boiled for is 120min with the 1st hop addition at 90min.

I can`t get my head around this :(
Is this what we`re saying-if you use, say, up to 100g. Green Bullet hops with an 14%AA, you won`t increase the bitterness by using 200g. of the same hop in the same manner.
Apologies for being a dumb bastard, but I can`t figure why.

Am I correct in saying that there simply isn't room in the wort for the additional alpha acids to go into solution/emulsion?
