AG Porter recipe collection?

Post by Fifey »

Hello guys, a couple of my mates really want me to brew a porter when I get my BIAB equipment (prolly after a batch or two of simple session ales). We then tried Renaissance's Porter and there'd be threats if I didn't give one a go. What are your tried and tested dark beer recipes?

Since my computer's HDD crashed a couple of months back and I lost all my recipes, I tend to just make up my recipes on the fly. For porters, I tend to start with a base of maybe 3kg Vienna (or any pale base malt,) 1kg Munich and 500g Wheat. Spec grains will differ depending on what I'm feeling on brew day but ~300g Crystal and ~200g Choc is a good place to start. I've added honey with good results and a few other adjuncts that have been experimental and probably not worth mentioning.

Mash at the higher end of the scale and bitter as you see fit. I've become a huge fan of Northern Brewer in dark beers and tend to use it for bittering at least.

I like S-04 and Nottingham for yeasties in porters, too.

I know it's not a recipe, as such, but hope that helps you out with ideas.

Carafa special is a must in any robust porter.

Or do you want something more like a dark ale?

Nah, definitely a porter. I've got some leftover carafa in the freezer too.

Edit: Good news is we can brew this with Simon's help (other local brewer) at his house with his 3 tier AG system! Should end up pretty bloody good with him at the reins.
