So I got a start on my Xmas Brew

1 Can Coopers Brew Master Pilsner (Believe it or Not I found a can)
2.5 kgs 2 row Pale Malt
500g honey
18 g Willamette Hops
2 tsp Irish Moss
zest 4 oranges
5 cinnamon sticks
10 all spice nuts
2 nutmegs
3 tbsp Vanilla Extract

Mash 2.5 kilos pale malt and sparge to make 12 litres.

Boil 60 min with Coopers Can and Honey

Final 20 min add hops

Final 15 min add all remaining except Vanilla

Strain and top to 23 litres with cold H to O and add vanilla extract

Ferment using Coopers Ale Yeast ......Yes Ale yeast, save the lager yeast for another day

By the way your house will smell wonderfull to.

sounds like winner Dogger, just have to make that Rudolph doesn't get near it or his red nose will go into overdrive!!

Must do a couple of others up, am planning on a Mint Chocolate Porter

Hi Dogger,
I'd be using a vanilla pod in the boil rather than extract -
I'm just not a fan or alcohol based extracts when the real deal is available....
How does the cinnamon go in beer for you?
I've tried it in an Ale with very average results (overpowering).
Nice mix with the oranges and Willamette honey and pilsner. I can taste it already.

As I use the sticks and take them out after the boil it doesn't get to bad

Vanilla, this is the real deal from Mexico, sorry, my fault there.

I will try and generate the mint recipie tonight after I have my Grade 3, 4 and Junior Kindergarten homework done :wink:

Oh and after I have meer beer for Tommo, can't miss out on that

Hello Dogger, thatxmas brew looks good, Like to try it but I wouldn't know where to or how to get the 2 row pale malt, and before you answer brew shop has limitted supply. If it is mashing I'm new. :oops: Hope your Brew Canada lager turned out good . The lager tastes the best.I have just trans my mead to the secondary and do I top up in the carboy with h20 I didn't but I've heard in wines you do. smells great can't wait for 6 months to taste it oh well guess I'll have to swill some homebrews 8)
Ithink my next will be a coopers stout with a dark ale. My 10 month old just fell asleep listening to Fleetwood Mac ,cool. That was a long story sorry guys.

Boy, didn't I love Stevie Knicks as a kid, still do I suppose.

Anyway enough of that, Don't top up the mead. Leave it as is. Sometimes less is more and this is one of those times
