db,

i'm thinking something similar to this for the next partial, can you suggest another hop in lieu of the Amarillo please ?

one more, can you explain the 90min (Mash Hop) addition ?

i'll have to use S-04 as i don't think my HBS will get US-56 in.

thanks

Cascade is close.. but not as good as amarillo IMO. you could get away with it tho. i'd personally go for any of the bigger 'fruity' american hops with higher AA% (i recently picked up some simcoe which i havent tried yet).. if you can get some amarillo i'd definatly recommend you give it a try (or pick up a squire's golden ale)
Mash hopping is adding hops to the mash (at the start). i've heard of alot of american brewers doing it. it adds a slight amount bitterness & supposedly "locks in" alot of the aroma/flavour qualities of the hops.. apparently the reason being that the wort has time to absorb the aroma compounds of the hops before the boil. whereas with hops added at the start of the boil the aromatic properties are driven off by the boil..
regarding the 90min bit. i was having a bit of trouble with chill haze (even when using irish moss) & read that a longer boil helps to clear it out.. it hasn't totally eliminated my chill haze but it's definatly improved it. i boil all my partials for 90min now
i have a later version of that recipe that didn't really impress me at the time.. i found 3 longies of this while cleaning out the cupboard the other day. & after 3 months in the bottle it was fantastic.. probably even made the effort put into the clean up worth it  i'll dig the recipe out of the "brewing pc" & post it for you..

yeah give the mash hop a try.. i mash hop most of my brews.

by the way i forgot to mention that with all the above recipes the LME i added after the boil. i like to keep the boil gravity low.. adding the LME to the pot at the end of the boil. it helps to get better extraction from the hops & help keep the colour down

i've only got the two partials under my belt, but yeah i do the same.
any LME, Kit or Honey gets added in the last 10 min of the boil.

thanks
