Mex Cerveza

G'day all

Just tried this brew after 2 weeks in the bottle:

Ingredients:

1 tin coopers Mex Cerv
1 kg Dextrose
300 gms LDM

Tasting notes : To sweet :(

This was my first brew using Dex and am wondering if using Dex has made it sweet ? also, will the sweetness drop over time with bottle maturity ?

Dextrose only adds to alcohol content, it does not impart any sweetness to the beer. The LDM would have made it sweeter.

Also this sweetness may continue to dissapear after a week or two more, it's only been in the bottle for 2 weeks.

Actually I had this problem too, I tried to put in a whole lot of dex and brew enhancer into a Mexican and mine is way too sweet as well.

luckyphill, how long did you leave yours in the fermenter? My first guess at why mine was so sweet was that I didn't leave enough time for all that dex to ferment out, so its still full of sugar. Or is this not the case??

Perhaps the Cervesa kit can is designed with a low bittering rate. The slice of lime should help make up for this and drink it well chilled. Or next time, try adding some extra hops.

Maybe like dogger said try using a dry enzyme next time, this will make sure its fully fermented out and dry it up alot :lol:

Hey "the Proud"..It was in the fermenter for 2 weeks so it should have had heaps of time to ferment out completley. I have a Coopers IPA on at the moment which has 700gms of LDM and about 850 gms of Dex and kit yeast....will be a stong brew I reckon, am bottling today so will taste the hydro reading and see what it is like.

I am just about to bottle my mex cerveza tomorrow and by then it will have been in the fermenter for 17 days. I used dry enzyme and just 1kg of brew enhancer (glucose/corn syrup) and on today's taste test, it is not too sweet, but I do still note a hint of cider in there, which I'm hoping will either go with maturing in the bottle, or be unnoticeable when drunk chilled.

I am very pleased with this brew. It is a little bit cloudy though...not too much so, but something I would like to work on. Again, maybe this will clear when bottled and carefully poured. I know that the answer for this is racking, but I only have one fermenter at the moment.

I took a hydro reading today (1.002). If it hasn't changed by tomorrow, I'm bottling. Then I'll do the cold condition in bottle after 2 weeks. Projected alcohol % is around 5.5 - 5.6% :D .

Your OG should be 1.052 and the FG should be 1.010 which makes roughly 6.2% :P

Coopers IPA should only take me less than a week if I was using Safale yeast, but two weeks? I am not sure, maybe ask the expereinced brewers here. :)

Just tasted my first attempt at Mexican Cerveza. I deliberately bottled one stubby for an early taste.

Very impressed. It has only been bottled for a week and a half... LOL.. no bubbles but she is going to be so nice.
