2 can cooper stout

Post by brewchild »

has anyone tried a 2 can brew of coopers stout. I think the body would be ok but I'm worried that it might be over bitter!!?
You can only drink so many bottles before you go ... so make sure they are all good ones!!!

Too bitter or not too bitter, that is the question. All depends on how bitter you like them.

I've not tried 2 x Coopers Stout, but have tried and can reccomend a Coopers Stout and a Coopers Dark Ale.

Cheers,

I found the Stout plus Dark Ale bitter at first - but the bitterness has really disappeared.

I reckon the 2 x Stout will be bitter at first - but in the end it'll come out a treat

Cheers

Here is what I did with the Stout + Dark Ale - http://hyperfox.info/beer01.htm#13

1 can Coopers Stout
1 can Coopers Dark Ale
250g Crystal Malt
200g Rolled Oats
10g Fuggles
90g dex and 30g of LDME for bulk priming

I found this one too sweet when I tasted it when it was a few weeks old. Haven't touched one since

I'm thinking of adding further bittering hops to this one - all the malt does seem to leave the stout on the sweet side once the initial bitterness subsides

I would use that same recipe, but add 200-300g of black patent.

200-300g of Black in something that already has roast malts in it is a lot IMO.

I've just bought a can of Dark Ale (on special at Coles BTW) to go with my Stout can. I was going to do the following from the Hyperfox site:

1 can Coopers Stout
1 can Coopers Dark Ale
150g Chocolate Malt (I'll probably only use 100g)
200g Rolled Oats

What about adding 500g of Dex to boost the alc content, or will that just ruin it? How strong would it be without it?

And another thing: should I pitch both kit yeasts? Would the kit yeast be able to handle another 500g of dex?

Cheers,

Tim

I would forget the dex.
Use 100gms of malt, too much choc malt can give an almost Kahlua flavour in the early stages (ie 0-3months).
Rehydrate and pitch both yeasts.

I did leave out the dex in the end.

Pitched both yeasts (rehydrated) and it's fermenting its little head off. Making a bit of a mess of my fermenter in fact. It even blew nearly all the water from my airlock so here's hoping there's no infection in there. But it's smelling mighty fine after 4 days.
