Whats that smell?

Post by Tadge »

Gday all,
I have just racked a witbeer clone to the secondary, the beer was not fully fermented though. I have to do this as I'll be away from work for the next four weeks and dont want to leave it on the trub.
When I cracked the lid however along with the normal beery smell was a faint hint of poo smell, faint but there. Any ideas? Infection??
If It helps I was very cautious with the sanitation.

Cheers

I'd be guessing the yeast. But I'm no wheat expert.

wouldn't worry too much mate, i've had a few that smelt like a bondi cigar during ferment but magically took on that nice beery quality and taste once bottled. Most of my poo smeller types were lagers, is this a lager? Lager yeasts are a bit prone to some funky stenches!!!

i've had some ales smell like that, i'm convinced it was light exposure - UV affecting the hop oils making that skunkiness i've heard about. When i covered my fermenters with dark towels, the problem disappeared.
