Malt in Coopers Pale Ale

Post by thisispants »

Using LDME in a coopers pale ale....is it going to be any good?

If I use a pale ale kit, 1kg of malt, and safale yeast....will it be ok?

Or should I use 500g of dex and 500g malt?

Depends a bit on what you mean by any good.

Yes, it'll taste great, but it will be maltier, and a bit sweeter than using dex.

Try doing two brews - one with dex and one with malt, and compare!

FWIW, I mostly use all-malt with kits, because I like to full, malty character, but it really depends on what you're aiming for.

cheers,
T.

If you use all-malt, also include some flavour/finishing hops. In my opinion it'll be heaps better than a kit and kilo alone, much more malty and tasty. Think Mountain Goat as opposed to Carlton Draught.

I'd recommend cascade or goldings hops. 12.5g at 15 mins, and 12.5g at 5 mins.

I'd definitely go Malt

I've actually just put down a beer without hops for the first time in months.

It is exactly the same as what you are saying here all bar the yeast.

Cooper Pale Ale
Stock Yeast
1kg of Coopers LDM

I am going to test it once cooked (Been in for 2 days now) and if it is a little bland, I am going to rack and dry hop about 20-25g of Cascade hops for aroma and slight taste......

I am even considering bottling half and racking the rest, just to be different.

Cheers

Mr pants,

One of my fave brews so-far has been the Pale ale kit + 1kg BE2 + kit yeast. BE2 contains LDME + dex + maltodextrin AFAIK so its a good middle ground.
All-malt would add body and extra sweetness, but if you're after a good quaffer the extra body can be filling. Next time I'm going to add some cascade and Saf-56 yeast to give it a more APA flavour. Should be a nice drop methinks.

Cheers,

Tim

Update............

Racked the Pale Ale (Mentioned above) tonight and it tasted pretty good.

Will leave this one without hops as it had a lovely malty taste.

Cheers

Why the hell wouldn't you make it with 1kg of LDME???

By German standards a beer has only 4 ingredients....malt, hops, water and yeast. I would use a good quality yeast, either a reconstituted Coopers Pale ALe yeast from the dregs of 6 or 7 stubbies or else something like a US-56 or an Liquid English Pale Ale yeast from Wyeast or White Labs.

On top of this I would either use 20gm of Cascade or if you want an English Pale then Goldings.

I very, very, very, very rarely use anything but malt for my fermentables these days, except I do add honey. If you want to make the brew truely memorable then toss in 500gm of either Yellowbox, strawberry clover, Manuka or Rainforest honey honey to the brew and be amazed at the added complexity that this gives to the brew.

Steady on.....

I do prefer some brews to be on the thinner side. Diff'rent strokes and all that.

Yep, I've done the same, but with some Goldings finishing hops. Only change I'd make to it would be to add some flavouring hops too, something around 30 mins, as it's a bit sweet.

But yes, definitely a delicious drop, one of the best kit and kilos I've done (up there with Wassa's Honey Porter).

I did a CPA with BE2 & only 200g LME & it made a significant difference to the taste, also nice creamy head. Rated by my hubbie as my best brew yet.
