Dried Extract Brew
I am thinking of doing the following brew. Will it work?
2.75 kg LDME
.25 kg Crystal grain (to be steeped 30 mins)
PoR cones (30 gr 60 mins, 15 gr 20 mins)
Fuggles 12 gr (at flame out)
Yeast starter cultured from Coopers Sparkling Ale
Total volume 23 litres
Hoping it turns out like a pale ale.

Coopers Pale Ale is also better to harvest yeast from than the dark or the stout due to it being clearer/lower alc respectively.

I did the brew yesterday, and it smells good from the airlock as it vents. I ended up doing the initial hop boil for 45 minutes, rather than 60, as I agree it might have been a bit too bitter. FG readings have been 1014 on each of the last 3 days, which is exactly where it was predicted to be. Bottled it today. When I tasted the sample it seemed to be rather malty in flavour, but with some hop bitterness.
Tomorrow we brew an LCPA using Boonie's recipe.
On tasting the first bottle some 3 weeks post bottling, I was a little disappointed with this. The maltiness seemed to overpower the taste and aroma, but I did notice the beer hadn't fully cleared yet. I decided to leave it to mature, and as of now it has cleared completely. The malt flavour has improvedand settled, and is now allowing the hop bitterness and flavour to come through. It was an interesting experiment, but it is time to move onto AG brewing. I'm very keen to attempt Trough Lolly's SNPA clone, given I have 5 stubbies of cultured WLP001 in the fridge.

Go for it! The WLP001 will do very nicely. Re your brew, I tend to find beer made primarily with DME to be a tad cloying - it's fine to use in a partial mash, but since the vast majority of your recipe is DME, you may find it takes some time to fully develop, and carbonate, in the bottle.warra48 wrote:On tasting the first bottle some 3 weeks post bottling, I was a little disappointed with this. Did you boil the hops with in a full sized boil with all of the DME or a mini boil with all of the DME? You may not have had as much bitterness in the final result if you boiled the 30g of PoR in a small volume, high gravity boil...Hop extraction efficiency depends primarily on boil gravity and duration of boil.
Did you take a starting gravity reading when you pitched the yeast? What was it?

Thanks TL. Always enjoy your posts, you are one of the champions of the forum , in my view (and other forums for that matter). I did only a partial boil of about 8 litres with the steeped grain liquid and 1 kg of the malt. The last of the malt I added in during the last 10 minutes of the boil.
My spread sheet shows I had an OG of 1050 in the fermenter, and it finished at 1014, which is about what I expected.
Don't get me wrong, I have started drinking this batch, and am now enjoying it, since the green malt flavours have matured. There is just enough hop bitterness to balance it out. However, I have done others which are better. It was part of the journey towards moving out of K&K and onto AG.
On a more positive note, Mrs Warra has OK'd the purchase of a 40 litre alu stock pot! This is in spite of the financial markets over the last week not doing the best with our finances. Who can explain love, even after 32 years of marriage?
My mash tun manifold is almost complete, so I should be up and running shortly. The local HB shop doesn't carry much in the way of grains or hops, so I'll be ordering all my supplies from Ross at CraftBrewer.

The 40 litre aluminium stock pot was delivered this morning by courier, bought from Allquip Pots . Yesterday I picked up 18 metres of ½ inch copper pipe, which was on special for $105 at Bunnings, which seemed like reasonable value to me. Mash tun is finished (took a week to track down and fix a small leak around the tap). I have a 3 ring burner with a spare propane tank, so almost ready to go.
