I have a coopers stout kit can at home laying around, I was wondering whether can I do some sort of porter- dark lager kinda thing with the stout can plus a lager yeast......or any yeast that works happy, at say 9-15 degrees? it is cold here in Vic...... is that a silly idea?

You can pitch an s23 to brew at low temps. Will give a quite serviceable beer. As an aside I've used s23 on stouts to try and avoid the messy super krausen.

Cheers,

Coopers Stout
Coopers Bevarian Lager
500g brown sugar(Dark Dry Malt Extract would be better if you have it)
Saflager S23 yeast

The Bevarian lager comes with a good yeast which you can use to make a nice starter. Put 1/2 of the DDME/Brown Sugar in a 2 lite botlle 3/4 full of boiled water, cool loosly capped until about 16-18 C then give it a good shake to create a nice krausen/head on the wort. Sprinkle the yeast in and wrap in a towel. Put it in a nice cool dark place and leave to rest for about 2 days but make sure the cap is loose enough to let air out!

Put the two cans of Coopers in your fermentor along with the remaining DDME/Brown Sugar and add a few litres of boiling water to disolve the mixture. Add ice and cold water until it is at about 12 C but make sure to leave room for the 2 litre of yeast! Pitch the yeast and it should go off like prawns in the sun.

Good luck and happy brewing!
