Hey Guys,
I was given a smack pack of california lager yeast, and was wondering whether it can be used like a lager yeast, but at temperatures between 14C and 20C instead of 8-12C, or whether it should only be used to make particular beers such as the californian common (steam). Could it be used to make a Kolsch?
Its a little old... i think the date on the packet is nov 06... but i'll give it a go... i like a challenge...

Nov 06 is pretty old, but this is an excellent lager yeast that ferments at room temps.
It makes great Steam Beers - my recipe for that brew...is here...

That does sound good, and with my grain brewing equiptment arriving soon, it might be one to try.
It might be one for the winter months.. I have a fridgemate, but i have a feeling the fridge will continually be used for lagers/pilsners instead of brews at the higher temps. If the yeast lasts that long...

I have never used that yeast before. I’m temped to try that recipe maybe with some Nelson Sauvin. Got some at the moment that I want to use on my next brew.

It's a great yeast - and it proves that you can make a nice lager at 18C!!
I fermented an Oktoberfest with this yeast (and called it a Steamfest!!) and it came out quite nicely - a smooth and rich amber lager.
