2007 Millennium Ale tasting notes and pictures

You will all, no doubt, be amazed that Geoff and I managed to taste the Millennium Ale in the year that we were scheduled to!

What you might not be surprised about is that it's taken more than two months to post the pics and tasting notes.

In any case, check out our observations on and the pictures of the 2007 Millennium Ale.

In summary, the Millennium Ale is coming along very, very nicely.

I would...

Recap with oxygen absorbing caps one at a time, carefully pry off the old cap and get the new cap on ASAP, once all capped drip canning wax over the caps and down all around the sides to the glass to seal completely.

Hi guys, great to read the Millennium Brew notes and yes, look at the pics.
6 bottles down just 94 more to taste test. It should be a magnificent brew
if it improves at this rate.

Very inspiring indeed........

I am seriously thinking of doing something similar, without copying your brilliant idea exactly, but on a smaller scale.....and most likely AG.........

Thanks for the forum fellas and updating the Millenium Ale tasting notes.

I like Kev's idea with the wax ...carfelly take off caps and seal again.....

Would you be better off dripping or dipping the entire top in wax after sealing with the cap?

I have NFI when it comes to wax but I thought if it was fully coated it would seal better.

If you use canning wax I am fairly sure it needs to be dripped or even poured onto the contained depending how big the lid is of course. Dipping would just be a major PITA and would also agitate the contents forcing any oxygen it may have been exposed to into the beer.

Good point...didn't think about the oxygen. I thought their would be no worries with the crud on the bottom, as it has atleast a minimum of 9 months of settling again til the next bottle and then another year and so-on.

I dunno... I'm not sure I'd bother with the recapping. The wax does sound like a good idea to prevent any additional corrosion.

Hi guys,

Sadly, beer has been taking a back seat to work and other commitments for both me and Geoff lately. I've been working flat out, including travelling interstate. Geoff's a barrister so generally doesn't work that hard, and finishes by lunch time when he is working. But he's been building a house and moving, and looking after his daughter, which has kept him occupied.

We have tasted last year's Millennium Ale and I'll post the notes over the Christmas break when I've got some time off. With any luck we'll also have tasted this year's by then and will post that, too.

Thanks for the update on the tastings.

Looking forward to the pictures.

At least I now know why I don't age my beers for more than about 18 months. It would still be interesting to taste it, more like a really old sherry or over aged port? Perhaps the beers are going through that awkward stage in their maturing, similar to the way some wines do, and they'll re-awaken with better intregration and newly developed complexity.

I hope you're right about it going through its awkward teenage years!

Yes, it's definitely more like a fortified wine than a beer.

We're looking forward to this year's tasting. It's quite novel that we'll be tasting it in the year we were meant to :D

The last line of the most recent tasting notes remind me of Oz and James when they go to the Royal beer cellar place and drink the 250 year old beer. The chap there says to not view it as a beer when drinking it, too...doesn't stop it making James May feel sick, though :P
